Baked bbq Chicken

3770905_origSo I was looking for a Winter recipe for Bone in chicken breasts because well it is just too cold to get outside and BBQ sometimes! I’m sure you could use legs and or thighs for this recipe and it would work perfectly but it even works for chicken breast and we all know how dry that can get.

So lets start with the marinade.


Cut your meat into manageable pieces.
5lbs would be perfect.
Don’t forget to score your meat so the flavour can get soaked in.
Add ¼ cup of oil. I like infused olive oils. My girlfriend brought me some delicious infused oils and I love her for it 😊
About 3 tbsps of a delicious smoked paprika
A clove of garlic crushed
¼ cup of lemon juice
And a liberal amount of salt.

Let your chicken marinade for 1 hour to 20 hours maximum. The lemon juice can tweak the texture of the chicken.

8147224_origNow place the chicken on a baking sheet and let it bake in a preheated oven at 350 degrees.
After 20 minutes baste your chicken with a delicious BBQ sauce. And do so every 5 minutes for 20-25 minutes. So you would have about 5 coats of BBQ sauce on the chicken. You want to make sure the chicken is cooked to 165 degrees internal temperature. But don’t over cook it.
The chicken is so moist and delicious a great compromise on a cold day!

Serve it with your favorite starch, for me it is fries, and your favorite veggies, for me parsnips and kale.
